Destiny displays the chicken pieces sautéed with garlic, just until golden brown.

The beginning - heat the pan over the wood fire

Add some olive oil, the sofrito mixed with calamari rings, a few saffron threads

Add the rice, stir it evenly into the sofrito

Chicken and browned sausage pieces are buried in rice, then green beans sprinkled on top

Hot broth added

Broth has boiled down to level of top of rice

Seafood - today clams, little octopuses, head-on shrimp - is added all around, pushing it into the rice gently

Cooking is done when liquid has been all absorbed/evaporated. Paella is taken off the fire


After it has rested for 15 - 20 minutes, parsley is sprinkled on top and paella is served with lemon wedges, a little salad and a lot of wine.
