A paella recipe

Destiny displays the chicken pieces sautéed with garlic, just until golden brown. |

The beginning - heat the pan over the wood fire |

Add some olive oil, the sofrito mixed with calamari rings, a few saffron threads |

Add the rice, stir it evenly into the sofrito |

Chicken and browned sausage pieces are buried in rice, then green beans sprinkled on top |

Hot broth added |

Broth has boiled down to level of top of rice |

Seafood - today clams, little octopuses, head-on shrimp - is added all around, pushing it into the rice gently |

Cooking is done when liquid has been all absorbed/evaporated. Paella is taken off the fire |

After it has rested for 15 - 20 minutes, parsley is sprinkled on top and paella is served with lemon wedges, a little salad and a lot of wine. |
