3 oz Sliced garlic
4 oz Olive oil
4 tsp Pimentón
2 TB Salt
17 C Water
1 oz Minced garlic

Garlic crôutons
Make the soup:
Cook sliced garlic in oil on medium heat until they are medium brown. Add pimentón
and cook about 1minute, just enough to release flavor – do not let burn! Add
water and simmer 10’. Off heat, add minced raw garlic.
To serve one portion:
Heat 1 C soup, poach an egg in it, garnish with garlic crôutons. |
