- 1 TB allspice
- 1 tsp cloves
- 2 TB black peppercorns
- 2 tsp cumin seeds
- 2 tsp toasted oregano (see recipe)
- 2 oz roasted or toasted garlic (see recipe)
- 2 TB salt
- 3 oz bitter orange juice
Crush with mortar or coarsely grind allspice, cloves peppercorns and
cumin.
Mix all ingredients thoroughly
The result will be a thick paste you can coat foods with.
