Recado blanco
White recado
Paste used to rub on and macerate chicken or fish. Makes enough to macerate 8 chickens.
  • 1 TB allspice
  • 1 tsp cloves
  • 2 TB black peppercorns
  • 2 tsp cumin seeds
  • 2 tsp toasted oregano (see recipe)
  • 2 oz roasted or toasted garlic (see recipe)
  • 2 TB salt
  • 3 oz bitter orange juice

Crush with mortar or coarsely grind allspice, cloves peppercorns and cumin.

Mix all ingredients thoroughly

The result will be a thick paste you can coat foods with.
